Ingredients
- 5 c. white rice, uncooked
- 1 (10 1/2 oz.) Portuguese sausage
- 1 (8 oz.) can tomato sauce
- 1/4 c. black olives, pitted
- 5 cloves garlic, crushed
- 2 tsp. salt
- 3 1/2 c. water
- 2 lb. pork
- 1 1/2 c. gondure beans
- 1 c. achote oil
- 1 medium onion, chopped
- 1 tsp. parsley, chopped
- 1 tsp. pepper
Directions

1Chop pork and sausage into small pieces; put in a large pot. Add achote oil and fry until brown.

2Add onions, garlic and parsley.

3Simmer for 5 minutes.

4Add tomato sauce, salt and pepper.

5Simmer for 5 minutes more.

6Add gondure beans and olives. Simmer for 5 minutes.

7Add water and bring to a boil.

8Then simmer for 15 minutes.

9Wash rice, drain and add to sauce mixture. Cook on low heat until rice is cooked.

10Stir occasionally.

11Makes 10 to 15 servings.
