Good Morning Fruit Soup

Ingredients
- 1 cup carrot (diced)
- 12 cup celery (diced)
- 12 cup onion (diced)
- 2 quarts water
- 34 cup apple juice
- 34 cup cherry juice
- 2 tablespoons brown sugar
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 14 teaspoon cinnamon
- 14 teaspoon ginger
- 18 teaspoon nutmeg
- 12 cup Red Delicious apple (diced, skin on)
- 12 cup golden delicious apple (diced, skin on)
- 12 cup peach (diced, skin on)
- 12 cup pear (diced, skin on)
- 14 cup blueberries (diced)
- 1 12 tablespoons cornstarch
Directions

1Place carrots, celery, onion and water in large pot (not aluminum) and bring to a boil.

2Simmer for 20 minutes.

3Strain, discarding vegetables and leaving only the stock.

4Add juices, brown sugar, lemon juice, salt, and spices and simmer for 10 minutes.

5Add fruits and bring to a boil, then simmer another 10 minutes.

6Strain mixture, putting fruits into food processor.

7Process fruits until coarsely chopped.

8Mix cornstarch with small amount of water and add to stock to thicken.

9Add processed fruit to stock and heat through.

10Serve with thick sliced cinnamon toast.

11For an elegant presentation, cut cinnamon toast into rings and float on top of soup.

12May be served hot or cold.
