Ingredients
- 1 c. mashed Irish potatoes
- 2/3 c. shortening
- 1/2 c. sugar
- 1 tsp. salt
- 2 eggs
- 1 pkg. yeast
- 1/2 c. lukewarm water
- 1 c. scalded milk, cooled to lukewarm
- 6 to 8 c. bread flour
Directions

1Mash potatoes.

2Add shortening, sugar, salt and eggs.

3Cream well.

4Dissolve yeast in lukewarm water and add to lukewarm milk. Pour into potato mixture.

5Add flour to make a stiff dough.

6Knead well.

7Put in a greased bowl and let double in bulk.

8Knead slightly.

9Rub top with melted butter.

10Place in casserole dish; cover tightly.

11Place in refrigerator until ready to bake.

12About 1 hour before baking, shape into rolls, cover and let double. Bake at 400° for 15 to 20 minutes.
