- 5-1/2 cups crushed gooseberries
- 7 cups sugar
- 1 box Certo Pectin Crystals
Directions

1Measure prepared fruit into large saucepan.

2Stir in pectin.

3Bring to full rolling boil on high heat, stirring constantly.

4Immediately stir in sugar.

5Return to full rolling boil and boil 1 min., stirring constantly.

6Remove from heat.

7Stir and skim foam for 5 min.

8to prevent fruit from floating to top.

9Pour immediately into warm sterilized jars, filling to within 1/4 inch of rims.

10Seal while hot with sterilized 2-piece lids with new centres.

11Let stand at room temperature until set.
