  • 3 1/2 c. gooseberries
  • 2 Tbsp. Minute tapioca
  • 1 1/2 c. sugar
  • 1/4 tsp. salt
  • 1 tsp. grated orange rind
  • 2 Tbsp. butter

    Mix and let stand 15 minutes.

    Line 1 (9-inch) pie pan with crust.

    Add fruit mixture and cover with top crust.

    Slit several spots to let steam escape.

    Bake in hot oven at 450° for 15 minutes, then at 350° for 30 minutes longer.
