  • 6 to 8 medium potatoes, cooked and cooled
  • 1 to 2 c. sour cream
  • 1 tsp. salt
  • 2 c. grated Cheddar cheese
  • 1/2 c. margarine or butter, melted
  • 1/2 c. chopped onion
  • 1/2 tsp. pepper

Directions

    Grate cold potatoes coarsely.

    Stir in cheese, sour cream, onions, and melted butter.

    Put in greased two-quart casserole dish, dot with 2 tablespoons butter and sprinkle with paprika. Bake, uncovered, for about 30 to 45 minutes at 375° until bubbly or light brown.
