  • 2 c. shredded Cheddar cheese
  • 6 Tbsp. butter
  • 6 medium potatoes, cooked, peeled and shredded
  • 1 1/2 c. sour cream
  • 1/3 c. finely chopped green onions
  • 1 Tbsp. salt
  • 1/4 Tbsp. pepper
  • paprika

Directions

    Combine cheese and 4 tablespoons butter. Cook over low heat until cheese melts, stirring until smooth. Stir in potatoes, sour cream, onions, salt and pepper.

    Place in greased 2-quart casserole. Top with remaining 2 tablespoons butter and paprika. Bake at 350° for 30 minutes or until heated through.
