- 6 medium potatoes
- 2 c. shredded Cheddar cheese
- 1/4 c. butter
- 1 1/2 c. sour cream
- 1/3 c. finely chopped onion
- 1 tsp. salt
- 1/4 tsp. pepper
- paprika
- 2 Tbsp. butter
Directions

1Cook potatoes in skins; cool, peel and shred coarsely.

2In saucepan, over low heat, combine cheese and 1/4 cup of butter. Stir until almost melted.

3Remove from heat and blend in sour cream, onions and seasonings.

4Fold in potatoes.

5Put in 2-quart greased casserole.

6Dot with remaining butter and paprika.

7Bake at 350° for 30 minutes.

8Serves 8.
