Gourmet Rice Dressing

Ingredients

  • 1 c. chopped onion
  • 1 c. chopped celery
  • 1 c. chopped celery leaves
  • 1 (4 oz.) can sliced mushrooms, drained
  • 1 c. uncooked rice
  • 2 to 3 Tbsp. butter
  • 2 c. chicken broth
  • 1 tsp. salt
  • 1/2 c. sliced almonds

Directions

    Saute onion, celery, celery leaves, mushrooms and rice in butter until vegetables are tender and rice is golden.

    Turn into a greased shallow 2-quart casserole.

    Stir in broth, salt and almonds.

    Cover and bake at 350° for 30 to 35 minutes or until rice is tender and liquid is absorbed.

    Fluff with fork.

    Serves 6 to 8.
