- 1 c. chopped onion
- 1 c. chopped celery
- 1 c. chopped celery leaves
- 1 (4 oz.) can sliced mushrooms, drained
- 1 c. uncooked rice
- 2 to 3 Tbsp. butter
- 2 c. chicken broth
- 1 tsp. salt
- 1/2 c. sliced almonds
Directions

1Saute onion, celery, celery leaves, mushrooms and rice in butter until vegetables are tender and rice is golden.

2Turn into a greased shallow 2-quart casserole.

3Stir in broth, salt and almonds.

4Cover and bake at 350° for 30 to 35 minutes or until rice is tender and liquid is absorbed.

5Fluff with fork.

6Serves 6 to 8.
