Directions

1Let meat stand at room temperature for 1 hour before cooking. Preheat oven to 375°.

2Rub meat with seasoning and place, fat side up, in a shallow roasting pan.

3Do not cover; do not add water. Cook 1 hour and turn off the heat.

4Do not open oven until serving time regardless of length of time the meat is in the oven.

5Turn oven on again 30 to 40 minutes before serving time, but reset temperature to 375°.

6The roast is now ready to serve.
