Governor'S Apple Cake

- 2 large Granny Smith apples, peeled and chopped
- 1/2 c. sugar
- 1/2 c. chopped walnuts
- 1/3 c. butter, melted
- 1 egg, beaten
- 1 tsp. vanilla
- 1/4 c. vegetable oil
- 1 c. sifted all-purpose flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. allspice
- pinch salt
Directions

1Heat oven to 350°.

2Grease an 8 or 9-inch round cake pan. Combine apples, nuts and melted butter in large mixing bowl.

3Stir in egg, vanilla and oil.

4Sift together flour, soda, spices and salt.

5Add to apple mixture, stirring only until blended.

6Pour into pan and bake at 350° for 40 to 50 minutes, until lightly browned and tester comes out clean.

7This cake can be served warm, but is even better if made ahead of time wrapped in plastic and refrigerated.
