Graham Cracker Cream Pie

- 16 graham crackers, rolled fine
- 1 tsp. flour
- 1/2 c. shortening or butter, melted
- 1 c. sugar
- 1 tsp. cinnamon
- 3 eggs, separated
- 2 c. milk
- 2 Tbsp. cornstarch
- 1 tsp. vanilla
Directions

1Mix graham crackers, flour, 1/2 cup sugar, cinnamon and melted butter for pie crust.

2Take half of mixture and pack into pie pan.

3Combine egg yolks, milk, 1/4 cup sugar, cornstarch and vanilla and cook until this mixture thickens.

4Pour into the pie pan.

5Whip together the egg whites and 3 Tbsp. sugar.

6Whip until it forms a thick meringue and spread on top of custard.

7Sprinkle remaining cracker crumb mixture over top of meringue.

8Bake in moderate oven, 325°, until meringue is brown.
