Graham Cracker Preserves Cake

  • 1 lb. graham crackers, crushed
  • 1 small can crushed pineapple
  • 1 c. nuts, chopped
  • 6 eggs
  • 1 stick butter or margarine
  • 2 c. sugar
  • 1 c. milk
  • 2 tsp. baking powder
  • 1/2 box raisins
  • 1/2 c. dates, chopped fine
  • 1/2 c. watermelon rind preserves or candied citron
  • 1/2 c. pear or peach preserves
  • 1/2 c. cherry preserves

    Cream sugar and butter.

    Crush graham crackers and mix with milk.

    Separate eggs.

    Add egg yolks, then nuts, raisins, dates, crushed pineapple and preserves.

    Add baking powder.

    Fold in beaten egg whites.

    Pour into tube pan or 9 x 13-inch pan and cook in moderate to slow oven for 1 hour and 15 minutes.
