Ingredients

  • 1 cake yeast
  • 1 1/2 tsp. sugar
  • 1 1/2 pt. warm water
  • 2 medium potatoes
  • 2 tsp. salt
  • 4 to 5 c. flour

Directions

    Cook the potatoes and mash.

    Dissolve yeast in warm water.

    Add yeast water to the mashed potatoes along with salt and sugar.

    Mix well; place in a crock and leave it on a warm hearth to rise.

    When mixture has risen almost to the top of crock, begin to add flour until you have a firm dough.

    Let rise until double in size.

    Then knead real good before shaping into loaves.

    Let rise again, then bake at 350° for 40 to 50 minutes, or until broomstraw stuck in comes out free of dough.

    Slice and spread with butter.
