Ingredients
- 2 c. corn meal (white)
- 2 tsp. butter, melted
- 1 tsp. salt
- 2 c. milk, scalded
- 1 tsp. sugar
- 2 eggs, separated
Directions

1Add the corn meal gradually to the milk, stirring constantly to prevent lumping.

2Cook over moderate heat for at least 15 minutes until the mixture thickens.

3Add butter, sugar and salt; set aside for a few moments while you beat the egg yolks.

4Spoon and stir the yolks into corn meal mixture; set aside while you beat the egg whites stiffly.

5Fold them into the corn meal mixture, stirring well, but slowly.

6Pour into a greased casserole or cast-iron skillet.

7Bake in 350° oven for 45 minutes.

8Serve hot from the baking container with milk, apple butter, ham and beans!
