  • 1 stick Softened Butter
  • 1 cup Loosely Packed Brown Sugar
  • 1 pinch Salt
  • 1 whole Egg
  • 1 teaspoon Vanilla
  • 1/2 teaspoons Baking Soda
  • 1 teaspoon Cinnamon
  • 1 cup (scant) Whole Wheat Flour
  • 1-1/2 cup Granola

Directions

    Using an electric mixer, cream together the butter and brown sugar until fluffy. Add salt, egg and vanilla, beat until combined. Add the baking soda, cinnamon and flour (I use a little less than 1 cup), and beat. Stir in the granola.

    Optional: replace the granola with large rolled oats. You could also stir in chopped nuts or dates, dried cranberries or raisins, even some chocolate chips!

    Drop the cookies onto a baking sheet and bake at 375 degrees for 10-12 minutes. Enjoy!
