- 1 c. granola
- 1/2 c. snipped dried apricots or raisins
- 1/2 c. boiling water
- 1 3/4 c. flour
- 1/2 c. sugar
- 1/2 c. chopped walnuts
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1 beaten egg
- 2/3 c. milk
- 1/2 c. cooking oil
Directions

1In mixing bowl, combine the granola and the apricots, pour boiling water over.

2Set aside.

3In another bowl stir together the flour, sugar, nuts, baking powder and salt.

4Make a well in the center.

5Stir egg, milk and oil into fruit mixture.

6Add all at once to flour mixture.

7Stir just until moistened.

8Spoon into greased muffin tins.

9Fill 2/3 full.

10Bake at 375° for 20 to 25 minutes.

11Makes about 18 muffins.
