- 2 lb. boneless chicken breasts, pressed thin
- 1/2 c. flour
- 1/2 c. olive oil
- 1 c. sour cream
- 3 eggs
- 1 c. Asiago grated cheese
- 4 plum tomatoes, cut up
- 3 scallions, cut up
- 1 clove fresh garlic
Directions

1In pan of 1/4 cup olive oil, saute fresh tomatoes, scallions and 1 clove fresh garlic.

2Mix sour cream and eggs.

3Dip boneless breasts in mixture, then flour.

4Place in 1/4 cup olive oil on baking sheet.

5Bake at 350° for 20 minutes.

6Remove.

7Add fresh tomato mixture.

8Top with Asiago cheese.

9Bake 10 more minutes. Remove.

10Let set 10 minutes and eat.
