  • 2 lb. boneless chicken breasts, pressed thin
  • 1/2 c. flour
  • 1/2 c. olive oil
  • 1 c. sour cream
  • 3 eggs
  • 1 c. Asiago grated cheese
  • 4 plum tomatoes, cut up
  • 3 scallions, cut up
  • 1 clove fresh garlic

Directions

    In pan of 1/4 cup olive oil, saute fresh tomatoes, scallions and 1 clove fresh garlic.

    Mix sour cream and eggs.

    Dip boneless breasts in mixture, then flour.

    Place in 1/4 cup olive oil on baking sheet.

    Bake at 350° for 20 minutes.

    Remove.

    Add fresh tomato mixture.

    Top with Asiago cheese.

    Bake 10 more minutes. Remove.

    Let set 10 minutes and eat.
