  • 1/2 c. sugar
  • 1/2 c. packed brown sugar
  • 3 Tbsp. all-purpose flour
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground ginger
  • 1/4 tsp. ground nutmeg
  • 7 to 8 c. thinly sliced peeled apples
  • 1 Tbsp. lemon juice
  • pastry for double crust pie (9-inch)
  • 1 Tbsp. butter
  • 1 egg
  • additional sugar

    In a small bowl, combine sugars, flour and spices; set aside. In a large bowl, toss apples with lemon juice. Add sugar mixture; toss well to coat. Line a 9-inch pie pan with half the pastry. Place apple filling into crust; dot with butter. Top with remaining pastry; flute edges and cut slits in top. Beat the egg white until foamy; brush over pastry. Sprinkle sugar on top. Bake at 375° for 35 minutes. Increase temperature to 400° and bake 10 to 15 minutes more or until golden.
