Ingredients

  • 1 white onion
  • 2 garlic cloves
  • 3 teaspoons olive oil
  • 1 green capsicum (seeded)
  • 1 cucumber (seeded and peeled)
  • 3 large tomatoes
  • 2 cups tomato juice
  • 1/4 cup fresh parsley (chopped)
  • 4 teaspoons lemon juice
  • 1/8 teaspoon Tabasco sauce

Directions

    Roughly chop all vegetables, blend together in food processor, or blender, until fairly smooth.

    Stir in lemon juice, parsley, tomato juice and tabasco sauce.

    Chill for 30 minutes, or more, and serve.
