- 3 cups vegetable juice
- 1 onion medium, minced
- 2 tomatoes mediums, diced
- 1 green bell pepper minced
- 1 garlic clove crushed
- 1 cucumber medium, diced
- 2 tablespoons lemon juice
- 2 tablespoons red wine vinegar
- 1 teaspoon dried tarragon
- 1 teaspoon fresh basil Minced
- 1 ground cumin
- 1 hot sauce
- 2 tablespoons olive oil
- salt
- pepper
Directions

1Combine all ingredients and chill for 2 hours.

2HINT: Out of time? Forget al the mincing and chopping. Cube the vegetables, then throw all of the ingredients into a blender or food processor and blend slowly until the vegetables are chunky and the soup is well blended.
