  • 2 oz. pita bread
  • 1 onion
  • 1 (10 oz.) box spinach, cooked and drained
  • 3/4 oz. Feta cheese
  • salt and pepper
  • 1/4 to 1/2 c. tomato sauce
  • 3/4 oz. Mozzarella cheese, shredded

Directions

    Preheat oven to 350°.

    Saute onion in pan prepared with nonstick spray until soft.

    Add spinach, salt and pepper and cook 5 minutes more.

    Add Feta cheese and cook 1 more minute until well mixed.

    Place all of spinach mixture on top of pita.

    Top with 1/4 to 1/2 cup tomato sauce and sprinkle Mozzarella cheese on top. Bake 5 to 10 minutes until cheese is melted.
