- 6 potatoes with skins, sliced
- 2 small yellow squash or green zucchini
- 1 medium onion, chopped
- zest of 1 lemon
- juice of 1/2 lemon
- fresh oregano
- 2 tomatoes, sliced
- 6 oz. Feta cheese
- olive oil
Directions

1Combine potatoes, onion, squash, lemon zest and juice in oiled 9 x 13 glass baking dish. Cover with sliced tomatoes. Sprinkle with Feta and oregano and drizzle with olive oil. Season with salt and pepper. Bake 1 hour at 375°. Uncover and bake 10 to 15 additional minutes.
