- 1/2 whole Cucumber, Peeled And Diced
- 3/4 cups Plain Greek Yogurt
- 13 cups Feta Cheese
- 1 clove Garlic, Minced
- 1 teaspoon Dried (or Fresh) Dill
- 1 teaspoon Lemon Juice, Freshly Squeezed
- Salt And Pepper, to taste
- 23 cups Red Onion, Chopped, Divided Use
- 2 Tablespoons Lemon Juice, Freshly Squeezed
- 1 teaspoon Onion Powder
- 1 teaspoon Garlic Powder
- 1 teaspoon Whole Coriander Seeds
- 1/2 teaspoons Salt
- 2 cans (15 Oz. Size) Chickpeas, Drained And Rinsed
- 3 cloves Garlic, Minced
- 23 cups Panko Bread Crumbs Divided
- Canola Or Olive Oil, For Frying
- 10 whole Mini Pita Breads
- Optional Garnish: Tomato, Onion, Lettuce, And Feta Cheese

1For the tzatziki sauce:

2Place cucumbers between two sheets of paper towels and press hard on them, you want to try and dry off some of the water so your sauce doesnt get too liquidy.

3In a medium bowl combine the yogurt, cucumber, feta, garlic, dill, lemon juice, salt and pepper.

4Mix well until you have a combined thick sauce.

5Cover and refrigerate for at least an hour.

6For the falafel patties:

7Add 1/3 cup onion, lemon juice, onion powder, garlic powder, coriander seeds, salt, chickpeas and garlic into the bowl of a large food processor.

8Pulse until well combined.

9You want the chickpeas to still be chunky, you dont want to puree it down to baby food.

10Add the patty mixture into a medium bowl and stir in the remaining 1/3 cup red onion and 1/3 cup of the panko breadcrumbs.

11Put the remaining 1/3 cup of panko breadcrumbs into a shallow dish.

12Take a small handful of the chickpea mixture and form it into a patty thats about 1/2 inch thick and a little smaller than the size of your palm.

13Dredge both sides of the patty in the panko crumbs and continue this format until youve used up all your chickpea mixture.

14Place enough oil to cover the bottom of a skillet (use one that will fit 4 patties at a time) and turn the flame to a medium heat.

15Cook patties (4 at a timedont crowd the skillet) until each side is a crispy golden brown.

16When done, remove patties from the skillet onto a paper towel lined plate and continue with the rest of the patties.

17To serve spread tzatziki sauce on the inside of your pita, top with patty and garnish with tomato, onion, lettuce, and feta cheese.
