  • 1 lb. medium Shrimp (peeled and deveined
  • 1 28oz can crushed tomatoes
  • 1 Large Zucchini
  • 3 cloves of garlic
  • 1 small onion
  • 1 TBS dried oregano
  • 1 Tsp Red pepper flakes (optional)
  • 1 Package Crumbled Feta Cheese
  • 1 Package Angel Hair Pasta

Directions

    Mince garlic and dice onion. Combine the onions and garlic with tomatoes, oregano, and pepper flakes in a shallow baking dish.

    Place baking dish in a preheated 350 degree for approximately 30 minutes or until the onions are tender.

    While the tomatoes are cooking julien the zucchini and add to the tomato mixture about 20 minutes into the cooking process.

    Once the onions are tender, add the shrimp and feta cheese. Bake for an additional 5 to 10 minutes or until the shrimp is cooked through.

    Cook pasta as directed, drain, and serve the shrimp and tomatoes over the pasta.
