  • 2 (10 oz.) rockfish filets
  • 1 1/2 to 2 Tbsp. olive oil
  • 1 tsp. garlic, crushed
  • 1/2 each: red and green pepper, julienned
  • 1 small onion, chopped
  • 1/8 tsp. oregano
  • 1/4 c. Feta cheese
  • 2 Tbsp. calamata olives, chopped

Directions

    Put filets on greased sheet pan.

    In saute pan, saute olive oil, garlic, peppers and onion.

    Pour on top of filets.

    Sprinkle oregano, then Feta cheese, then olives on top.

    Bake at 350° for 10 minutes per inch thickness.
