- 2 (10 oz.) rockfish filets
- 1 1/2 to 2 Tbsp. olive oil
- 1 tsp. garlic, crushed
- 1/2 each: red and green pepper, julienned
- 1 small onion, chopped
- 1/8 tsp. oregano
- 1/4 c. Feta cheese
- 2 Tbsp. calamata olives, chopped
Directions

1Put filets on greased sheet pan.

2In saute pan, saute olive oil, garlic, peppers and onion.

3Pour on top of filets.

4Sprinkle oregano, then Feta cheese, then olives on top.

5Bake at 350° for 10 minutes per inch thickness.
