Green Bean Salad

  • 1 lb. green beans
  • 1 small red onion
  • 1 bunch green onions, chopped
  • 3/4 c. olive oil
  • 1/4 c. salad vinegar
  • 1 tsp. dill
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 4 oz. crumbled feta cheese
  • 1 c. broken walnuts (optional)

Directions

    Steam beans in a large frying pan with 1/4 inch of water (do not overcook, leave them slightly crisp). Toss in the mixture at least one hour before serving.

    Serve cool to room temperature. Salad keeps well in the refrigerator.
