  • 1/4 c. butter or margarine
  • 8 large shallots, sliced and separated into rings
  • 6 c. water
  • 2 lb. fresh green beans
  • 1/4 tsp. salt
  • 1/4 tsp. pepper, freshly ground
  • 1 c. fresh Parmesan cheese, shaved

Directions

    Melt butter in pan. Add shallots and cook until golden. In another pan, bring water to a boil. Add beans and cook 10 to 12 minutes. Drain beans. Stir in shallots, salt, pepper and Parmesan cheese. Serves 8.
