- 1/4 c. butter or margarine
- 8 large shallots, sliced and separated into rings
- 6 c. water
- 2 lb. fresh green beans
- 1/4 tsp. salt
- 1/4 tsp. pepper, freshly ground
- 1 c. fresh Parmesan cheese, shaved
Directions

1Melt butter in pan. Add shallots and cook until golden. In another pan, bring water to a boil. Add beans and cook 10 to 12 minutes. Drain beans. Stir in shallots, salt, pepper and Parmesan cheese. Serves 8.
