- 4 onions
- 1 1/2 lb. Monterey cheese
- 2 cans cream of chicken soup
- 1 (10 oz.) pkg. frozen spinach, thawed and drained
- 1/4 c. minced green onions
- 2 to 3 jalapeno peppers, seeded and chopped
- 2 c. sour cream
Directions

1Combine spinach, green onions, soup and peppers in blender. Add sour cream.

2Soften tortillas in hot oil.

3Layer tortillas with onions and cheese, then green spinach sauce.

4Cover with remaining cheese.

5Bake at 325° for 30 minutes.
