Green Iced Tea

  • 1 piece Fresh Ginger, About 3 Ounces (or 80 Grams)
  • 10 teaspoons Green Tea
  • 3 ounces, weight Grape Sugar (about 80 Grams)
  • 1 whole (sweet) Lime
  • 8 stalks Lemon Balm
  • 3-1/4 pints Boiling Water

Directions

    Peel the ginger, mince it, and stir it in the boiling water. Let it cool down a bit.

    Pour the ginger-water over the green tea and leave it to draw for 3 minutes. If you're using green tea leaves, drain it after that.

    Mix in the grape sugar and the juice of the (sweet) lime.

    Put ice cubes and the leaves of the lemon balm stalks in a carafe and pour the tea on it.
