- 1 piece Fresh Ginger, About 3 Ounces (or 80 Grams)
- 10 teaspoons Green Tea
- 3 ounces, weight Grape Sugar (about 80 Grams)
- 1 whole (sweet) Lime
- 8 stalks Lemon Balm
- 3-1/4 pints Boiling Water
Directions

1Peel the ginger, mince it, and stir it in the boiling water. Let it cool down a bit.

2Pour the ginger-water over the green tea and leave it to draw for 3 minutes. If you're using green tea leaves, drain it after that.

3Mix in the grape sugar and the juice of the (sweet) lime.

4Put ice cubes and the leaves of the lemon balm stalks in a carafe and pour the tea on it.
