- 3/4 c. green onions, thinly sliced
- 3 Tbsp. salad oil
- 1 c. rice, cooked
- 1/2 c. green peppers, minced
- 1/4 c. parsley, minced
- 2 c. stock (chicken)
- 1 tsp. salt
- 1/4 tsp. pepper
Directions

1Cook onions (use tops as well as white part) in salad oil until soft, but not browned.

2Add remaining ingredients.

3Pour into a 2-quart baking pan with cover.

4If no cover is available, use foil.

5Bake at 350° for 30 minutes or until rice is tender. Toss lightly with a fork before serving.
