  • 3/4 c. green onions, thinly sliced
  • 3 Tbsp. salad oil
  • 1 c. rice, cooked
  • 1/2 c. green peppers, minced
  • 1/4 c. parsley, minced
  • 2 c. stock (chicken)
  • 1 tsp. salt
  • 1/4 tsp. pepper

Directions

    Cook onions (use tops as well as white part) in salad oil until soft, but not browned.

    Add remaining ingredients.

    Pour into a 2-quart baking pan with cover.

    If no cover is available, use foil.

    Bake at 350° for 30 minutes or until rice is tender. Toss lightly with a fork before serving.
