- 2 c. rice (Uncle Ben's, uncooked)
- 2 tsp. salt
- 2 medium onions, chopped
- 2 medium green peppers, chopped
- 1 can cream of chicken soup (undiluted)
- 2 eggs, beaten
- 2/3 c. oil or butter
- 2 c. grated American cheese
- 1 clove garlic or powder
Directions

1Cook onions, green peppers and garlic in oleo.

2Cook rice according to package directions.

3Add eggs, salt, oil and onion mixture.

4Stir in cheese.

5Place in casserole dish; spread chicken soup over top.

6Bake 45 minutes at 350°.
