  • 2 c. rice (Uncle Ben's, uncooked)
  • 2 tsp. salt
  • 2 medium onions, chopped
  • 2 medium green peppers, chopped
  • 1 can cream of chicken soup (undiluted)
  • 2 eggs, beaten
  • 2/3 c. oil or butter
  • 2 c. grated American cheese
  • 1 clove garlic or powder

    Cook onions, green peppers and garlic in oleo.

    Cook rice according to package directions.

    Add eggs, salt, oil and onion mixture.

    Stir in cheese.

    Place in casserole dish; spread chicken soup over top.

    Bake 45 minutes at 350°.
