- 3 c. cooked rice
- 1 1/2 c. grated Cheddar cheese
- 1/2 c. finely chopped green onions
- salt and pepper to taste
- 6 Tbsp. melted butter
- 3 egg yolks, beaten
- 3 egg whites, stiffly beaten
- 3 Tbsp. chopped onion
- 1/2 c. minced parsley
Directions

1Mix all the ingredients, except egg whites, until thoroughly combined.

2Fold in the stiffly beaten egg whites.

3Grease a 1 1/2-quart baking dish with butter and add mixture.

4Preheat oven to 350° and bake 25 minutes.
