  • 1c packed cilantro leaves
  • 1/2c packed parsley leaves
  • 1/4 white onion, chopped
  • 1 garlic clove, chopped
  • 1t olive oil
  • 1c long grain white rice
  • 1T fresh lime juice

Directions

    In a blender, combine cilantro, parsley, onion, garlic, and one and 3/4c water. Season with salt and pepper and blend until smooth, 15 seconds.

    In a medium saucepan, heat olive oil over med-high. Add rice, stir to coat. Add herbs and bring to a boil. Reduce to a simmer, cover, and cook until water is absorbed, about 15 mins. Remove from heat and let sit 5 mins. Add lime juice and fluff with a fork.
