- 3 Tbsp. margarine
- 1/2 c. minced green peppers
- 1 c. raw rice
- 2 c. chicken broth
- 1/2 tsp. pepper
- 1/2 c. minced parsley
- salt to taste
Directions

1Cook onions in margarine until soft, but do not brown (use tops and bottoms).

2Add remaining ingredients.

3Pour into a 2-quart casserole dish with cover.

4Bake in 350° oven for 30 minutes or until rice is tender and dry.

5Toss lightly with fork.
