- 1 1/2 c. long grain rice
- 3 c. water
- 1 tsp. salt
- 1 (10 oz.) pkg. frozen chopped spinach
- 1/8 c. chopped green onion
- 1/2 c. Parmesan cheese
- salt and pepper
- 1 tsp. oregano
- 1 tsp. thyme
- 1/3 c. butter, melted
- 2 eggs, beaten
- 1 c. milk
- 2 Tbsp. butter
Directions

1Cook rice in 3 cups water and salt for 20 minutes.

2Add cooked and drained spinach, onion, 1/3 cup cheese, salt and pepper.

3Stir in herbs and melted butter.

4Put mixture in casserole dish and add eggs beaten with milk.

5Sprinkle with remaining cheese, dot with butter and bake 1 1/4 hours.
