  • 4 c. finely chopped green tomatoes
  • 2 c. packed brown sugar, divided
  • 2 Tbsp. lemon juice
  • 1 tsp. lemon extract
  • 3/4 c. butter, softened
  • 1 1/2 c. all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 c. old-fashioned oats
  • 1/2 c. chopped walnuts

    Drain tomatoes on paper towel for 10 minutes. In a saucepan, combine tomatoes, 1 cup of brown sugar and the lemon juice. Simmer, uncovered, for 20 to 25 minutes or until thickened. Remove from the heat and stir in the extract. Set aside.
