  • 3 cups flour
  • 2 cups sugar
  • 1 Tbsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1/4 tsp. baking powder
  • 2 eggs
  • 1 cup oil
  • 1 tsp. vanilla
  • 2 cups finely chopped green tomatoes
  • 1/2 cup chopped nuts

Directions

    Preheat oven to 350 degrees.

    Grease and flour the bottom and 1/2 inch up the sides of two 8 x 4 x 2 inch loaf pans.

    In a large bowl stir together flour, sugar, cinnamon, salt, baking powder and soda.

    Combine eggs, oil, vanilla, chopped green tomatoes.

    Add egg mixture all at once to dry mixture.

    Stir until moistened. Batter will be lumpy.

    Bake at 350 degrees for 55-60 minutes or until toothpick comes out clean.
