  • 1 peck sliced green tomatoes
  • 8 large onions, peeled
  • 1 green pepper, cut up
  • 1 red sweet pepper, cut up
  • 1 quart vinegar
  • 2 c. white sugar
  • 2 c. brown sugar
  • 3 Tbsp. whole cloves
  • 2 5-inch sticks of cinnamon
  • 1 Tbsp. mustard seed
  • 3 Tbsp. whole allspice
  • pickling salt

    Combine green tomatoes, onions, green pepper red pepper and sprinkle lightly with pickling salt.

    Let stand 3 hours.

    Drain and rinse.

    Add: vinegar, sugar and

    brown sugar.

    Place in cheese cloth bag and add to above the following: cloves, cinnamon sticks, mustard seed and

    allspice. Bring vegetable and syrup slowly to boil.

    Reduce heat and cook slowly about 1 hour.

    Seal in sterilized jars.
