Mixed Bean Bruschetta

  • 1 tbsp olive oil
  • 1 None onion, finely chopped
  • 2 tsp smoked paprika
  • 1 (13.5 oz) can kidney beans, drained and rinsed
  • 1 (13.5 oz) can lima beans, drained and rinsed
  • 1 (13.5 oz) can diced tomatoes
  • 2.5 oz char-grilled peppers, diced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh oregano, chopped
  • 4 thick slices whole grain bread, toasted

Directions

    Heat oil in a frying pan over medium heat, add onion and paprika and cook for 3-5 mins, stirring, until onion is soft. Add beans, tomatoes and peppers. Reduce heat to low and cook for 8-10 mins, until sauce thickens. Add parsley and oregano. Season to taste and serve on slices of warm toast.
