Greens Quesadilla

Ingredients

  • 1 cup cooked greens (boiled or stir fried)
  • 1/2 cup sauteed chopped vegetables, (onions, peppers, tomatoes asparagus, etc.)
  • 2 floured tortillas
  • 1/4 cup shredded cheddar cheese
  • 1 egg, hard boiled
  • Ranch dressing (or dressing of choice)

Directions

    Place 1/2 cup ingredients on each shell.
  2. 2
    Fold in half and fry until golden brown on each side. Slice boiled egg and place on top of quesadilla and top with ranch dressing. (Or your favorite dressing.)
