- 1/2 cup sauteed chopped vegetables, (onions, peppers, tomatoes asparagus, etc.)
- 2 floured tortillas
- 1/4 cup shredded cheddar cheese
- 1 egg, hard boiled
- Ranch dressing (or dressing of choice)
Directions

1Place 1/2 cup ingredients on each shell.

2Fold in half and fry until golden brown on each side. Slice boiled egg and place on top of quesadilla and top with ranch dressing. (Or your favorite dressing.)
