  • 1/2 loaf sourdough bread enough for 6 slices
  • 3 tablespoons butter
  • 1 ounce white cheddar
  • 1 ounce muenster
  • 1 ounce gruyere
  • 6 tablespoons caramelized onions
  • 1 tablespoon fresh basil
  • 1 teaspoon fresh thyme
  • 1 tomato

Directions

    Cut sourdough into 6 thick slices. Grate or slice cheeses.

    Roughly chop basil and thyme. Cut tomato into slices.

    Add butter to a hot pan, let melt. Turn heat down to low.

    Assemble one grilled cheese in the pan, or all of them side-by-side if you have space in the pan: Butter bread, put buttered-side-down bread into hot pan. Top with cheese, onions, a slice of tomato, and a scattering of herbs. Top with another slice of buttered bread.

    Let this brown nicely, and then flip. Press down with spatula to encourage browning.

    Repeat with the other two sandwiches if doing them one at a time. Serve hot.
