- 34 cup yellow cornmeal
- 14 cup all-purpose flour
- 2 teaspoons salt
- 1 teaspoon cayenne pepper
- 12 teaspoon garlic powder
- 4 catfish fillets
- yellow mustard
- vegetable oil
Directions

1Heat oil in a large cast iron skillet to 350 degrees.

2About 1 1/2 inches depth.

3Combine cornmeal, flour, salt, cayenne pepper and garlic powder.

4Coat fish with thin layer of mustard on both sides.

5Dredge catfish in cornmeal mixture.

6Fry fish for about 5-6 minutes.

7Remember don't overcrowd your pan or it won't be as crispy.

8I usually fry 1-2 fillets at a time.
