  • 2 tablespoons cilantro leaves chopped fresh
  • 1 lime juiced
  • 1 tablespoon olive oil
  • 1 clove garlic crushed
  • 6 skin-on cod fillets
  • 1 mango peeled, stoned, finely chopped
  • 2 tablespoons cilantro leaves fresh, roughly chopped
  • 1 shallot small, finely sliced
  • 2 Bird's eye chilies finely chopped
  • 2 teaspoons olive oil
  • 1 teaspoon red wine vinegar
  • 1/2 teaspoon sugar

Directions

    In a small bowl, combine cilantro, lime juice, oil and garlic. Add the fish, turning to coat. Marinate, covered, in the fridge for 20 mins.

    In a small bowl, combine all the salsa ingredients.

    Preheat a grill on high. Cook fish for 3-4 mins each side, until flesh flakes easily when tested with a fork. Serve with the salsa.
