  • 2 eggplants sliced
  • 1/2 red onion peeled and minced
  • extra-virgin olive oil
  • olive
  • 1 tablespoon cherry tomato
  • salt

Directions

    Grill or broil the eggplant for a few minutes on each side.

    Cut the eggplant into strips and season with onion, tomato and olive paste, a few drops of oil and a pinch of salt
