  • 2 1/4 lb white fish fillets, cut into chunks
  • 2 None medium zucchini, cut into chunks
  • 1 None red pepper, cut into chunks
  • 1 None medium red onion, cut into wedges
  • 1 cup plain yogurt
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp sweet paprika
  • 1 cup fresh cilantro leaves

    Preheat grill or broiler. Thread fish, zucchini, pepper and onion onto 8 soaked wooden skewers. Grill or broil skewers for 10 mins, turning, until cooked through.

    Meanwhile, combine yogurt, lemon juice, garlic and spices in a small bowl. Spoon over skewers and sprinkle with fresh cilantro.
