- 1 1/2 cups granulated sugar
- 1 1/3 cups (2 2/3 sticks) salted butter
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
- 1 teaspoon lime zest
- 2 large eggs
- 3 tablespoons whole milk
- 4 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon kosher salt
- One 8-ounce package cream cheese
- 1/3 cup powdered sugar
- 1 teaspoon vanilla extract
- Zest of 1/2 lemon
- 1/2 cup apple jelly
- Coconut oil, for oiling the grill pan
- 10 strawberries, hulled
- 4 kiwi fruit, peeled and quartered
- 2 peaches, quartered
- 1/2 pineapple, skinned, cored and cut into 1/4-inch slices

1Special equipment; 8 metal or wooden skewers

2For the cookie crust: Preheat the oven to 350 degrees F.

3In a large bowl, cream the granulated sugar, butter, vanilla and lemon and lime zests thoroughly.

4Add the eggs and beat until light and fluffy.

5Add the milk and mix.

6In a medium bowl, sift together the flour, baking powder and salt.

7Blend the flour mixture into the butter and sugar mixture.

8Divide the dough in half, flatten into discs and wrap with plastic wrap.

9Refrigerate for 1 hour or freeze for 20 minutes.

10Roll out the 2 pieces of dough and put each one on a baking sheet.

11Bake until the cookie dough is cooked and golden brown but not overly crisp, 8 to 10 minutes.

12Allow to cool completely.

13For the topping: Using a mixer with a whisk attachment, whip together the cream cheese, powdered sugar, vanilla and lemon zest in a medium bowl until light and fluffy.

14For the apple jelly glaze: Mix the apple jelly and 3 tablespoons water together in a bowl.

15For the grilled fruit: Heat a grill pan to medium-high heat and oil with the coconut oil.

16Thread the strawberries, kiwi, peaches and pineapple slices separately onto skewers (there should be about 2 skewers per type of fruit) and lay them onto a plate.

17Brush with the apple jelly glaze.

18Turn the skewers over and brush the other side with more glaze.

19Grill the fruit, turning once, until grill marks appear, 2 to 3 minutes.

20Remove the fruit from the skewers, placing each type of fruit into individual bowls.

21Serve the cooled crusts with the cream cheese topping, bowls of grilled fruit and the remaining apple jelly glaze.

22Let everyone build their own pizza by spreading the cream mixture on the crust and decorating with as much fruit as desired, finishing with a final brushing of the apple jelly mixture for gloss!
