Grilled Marinated Tuna

Ingredients
- 3 lb. fresh tuna
- 2 garlic cloves, crushed
- 1 medium onion, finely chopped
- 1 tsp. dried oregano or marjoram
- 1 tsp. coarsely ground pepper
- 1 1/2 c. robust red or dry white wine
- 1/2 c. olive oil
- 1 bay leaf
- 1 (2-inch) strip orange rind
- 2 to 3 medium zucchini, cut crosswise into 1/2-inch rounds
Directions

1Trim away any dark red portions of the tuna.

2Cut the tuna into 1 1/2-inch squares and place in

3a nonmetallic bowl.

4Add the garlic, onion, oregano and pepper and toss well, rubbing the seasonings into the fish.

5Add the wine, oil, bay leaf and orange rind and turn the fish to coat with this mixture.

6Marinate for 30 minutes at room temperature.

7Prepare the grill.

8Thread alternating pieces of the tuna and zucchini snugly on skewers. Grill about 5 minutes on each side, brushing occasionally with the reserved marinade, until lightly browned.

9Serve immediately.
