- Two 1 1/2-pound cleaned whole sea bream (orata)
- Kosher salt
- Canola oil, for brushing
- 4 tablespoons extra-virgin olive oil
Directions

1In a large bowl, cover the fish with cool water.

2Generously salt the water and let stand for 1 hour at room temperature.

3Drain the fish and pat dry.

4Light a grill to medium and oil the grate.

5Rub the fish with 2 tablespoons of the olive oil and season lightly with salt.

6Grill, turning once, until cooked through, about 20 minutes.

7Transfer to a platter, drizzle with the remaining olive oil and serve.
