- 2 carrots small, peeled and julienned
- 1 zucchini large, julienned
- 1 cup broccoli florets
- 1/2 onion medium, chopped
- cooking spray
- 2 flour tortillas large
- 2 teaspoons cream cheese, softened
- 1 tablespoon dijon mustard
- 2 tablespoons parsley minced
- 3 tablespoons olive oil
Directions

1Spritz the grill with cooking spray and grill the vegetables on medium-high heat until cooked thoroughly.

2Whisk together the mustard, parsley, and olive oil to make the dressing.

3Toss the grilled vegetables with the dressing.

4Heat the tortillas until soft and manageable and spread with cream cheese. Fill with the vegetables. Roll into a burrito shape and heat on the grill until brown in spots. Serve.
